There's something very French and reassuring about this house on the water's edge, this bonhomie welcome and these dishes smelling of the terroir. Jean-François Pech hardly ever changes his recipes, and his mastery would almost dissuade him from doing so, so accurate is he in developing his Quercy cuisine. In a colorful, plush setting designed to welcome special occasions, or to rediscover the region's finest products, from the fine escalopes of pan-fried foie gras with honey and candied ginger, the real cassoulet from Castelnaudary (allow a good forty minutes), the very good duck breast with morel mushrooms, the checkerboard with two chocolates. Local wines are also a must.
