Remarkable Restaurant Alain Perrillat-Mercerot and Delphine Pontet are always on hand. They bring together all the ingredients to make your meal unforgettable. A warm welcome, either indoors in the elegantly wood-panelled dining room, or out on the terrace, either with a breathtaking view of Lac du Bourget and Mont Revard. Both the chef's Savoyard origins and his imagination are evident in his unexpected compositions, based on carefully selected local producers. Arctic char is accompanied by a chard mille-feuille garnished with a gourmet pormonier. The visuals are particularly meticulous, highlighting the colors of seasonal products. The "Tomato, tomato and tomato" appetizer, for example, features a cameo of reds enhanced by the white of the tomato juice emulsion and the green of the basil. Other herbs round out the flavors, even in the desserts, where tarragon and sorrel rub shoulders with chocolate. The cooking is just right, the flavors delicate. The top-notch cellar showcases my local winemakers.
