Gourmet Restaurant This restaurant on the edge of the old town, near the boulevard, is doing well. Alexandre Pichard's cuisine is well positioned, with a favorable price-pleasure ratio, on a creative and personal menu that always manages to surprise and seduce: galantine de cerf mousseline de poulet jaune foie de volaille jus réduit pulpe de haricot noir lard fumé, raie confite émulsion iodée crème crue combawa scorsonères, merlan de bœuf béarnaise maison pulpe chou rouge beurre fumé pomme verte et pomme de terre piment doux fumé, in an impeccable lunch menu, very interesting for €26, ending with the pepper, orange and chocolate ganache. In the dining room, Valentin gives good advice, particularly on the choice of wines from a well-stocked Loire cellar. Just as much work, and slightly more noble products, in the €40 evening menu.
