The beautiful Bordeaux stone serves as the vaulted décor for this bourgeois table de bon ton, where the cuisine is deft and even a little daring at times. Sourced products, ingredients and condiments in tune with the times, elaborate and somewhat cumulative dishes for these two confirmed toques: roast eggplant labneh with sumac and carrot confit in green pepper sauce, saddle of lamb at low temperature with edamame mushrooms and berry-infused jus court, half-baked Sao Tomé chocolate cookie with mango cream in a varied €49 menu.
