How do you "greenwash" in the heart of the city? Behind the bright green facade, the promise is kept of plant-based, virtuous and organic cuisine, where spices and far-off flavors embellish local produce: Japanese-style watercress spring roll with mango sauce, kasha balls with leeks and carrots, tahini with butternut and sweet potato purée, verrine with almond milk, banana and chia seeds, kiwi coulis and vegan Breton shortbread. The full menu costs €44, with wine by the glass, jug or bottle, beers, fruit juices and infusions.
