Settled in the heart of the Sixth arrondissement, this native of Haute-Ligère might sometimes miss the pure air of his native Auvergne, but he's managed to bring the treasures of his region back with him so well that, in the end, he's not so out of place. For the past ten years, François Gagnaire has been bringing his local cuisine to life, cultivating the taste of pastures, green lentils from Le Puy, organic eggs in chicken jelly, smoked trout mousseline, pastoral vegetables with fruits and mushrooms of the moment, roast free-range poultry with tarragon and mashed potatoes with preserved lemon, and baba bouchon with couderc plum and mascarpone chantilly. A fine Auvergne cellar.
