Chef's Restaurant François Gagnaire, a native of the Haute-Loire, whom we knew in Le Puy in a previous life, is one of the best ambassadors of true local cuisine. The room is a little noisy, but that's the sound of a great atmosphere, greedy and sharing for these stout dishes or finer ones depending on the moment: the pâté en croûte from chez Vérot to whet the appetite, the delicious risotto with sea urchin foam, clams, prawns, samphire and razor clams in parsley, before an all-pig dish, black pudding paste and quince mogettes with pig's trotter, before the baba presented like a burger, clementine sorbet. Relaxed service, a good sommelier who defends Auvergne wines well.
