A stone's throw from Bercy, we settle into a soothing room, lined with books and bathed in soft light. In the dining room, there are few words, but a presence that follows the rhythm. The crispy tuna opens the meal with a perfect balance of crunch, acidity and freshness. The tataki follows, generous and well-seared, supported by melting beet and a light lemongrass espuma. The chocolate mi-cuit is visually appealing with its vanilla custard, but lacks a little warmth at its heart. For €33 at lunchtime, a well-balanced experience from Adrien Capiez.
