Only open for a year, Louis Chabran's Colombian restaurant is already the liveliest and most modern in town. Today's urban fashion is for ceviches and tacos, but rarely is it expressed so well, in the freshness of the products, the seasonings and the ideas for blending the local with these flavors from elsewhere: well-spiced, tangy sea bream ceviche, gourmet lamb ribs with crunchy seasonal vegetables, octopus with chimichurri sauce or rabbit with figs. Good young front-of-house team supervised by a professional manager, appropriate wine cellar, numerous cocktails and mocktails, musical entertainment at weekends...
