A Japanese chef, Keiji Shinohara, who worked at Constant and was chef at Maxim's for seven years, a rather elegant dining room in a low-voltage atmosphere, enough to provide a soothing moment with menus that are all hidden, which the restaurateur details as "starter, fish, meat, dessert". There's technique, knowledge and good produce in this cuisine of the moment, which you'll get the most out of with the €39 and €52 lunch menus.
