Jean-Gary Bobo, after a successful career at Balaruc's Grand Large, has now set up shop in the heart of the town with a well-defined project. Even if the name changed after a few months (Immersion became Aliro), the concept remains the same: hidden menus, low prices (€29 and €39 for lunch, €59 and €79 for dinner, depending on the number of services), sourced and preferably local products.
