Jean-Gary Bobo, after a successful career at Balaruc's Grand Large, has now set up shop in the heart of the town with a well-defined project. Even if the name changed after a few months (Immersion became Aliro), the concept remains the same: hidden menus, contained prices (€27 and €37 at lunchtime, €47 and €67 in the evening depending on the number of services), sourced and preferably local products.
