At the edge of the village, on the outskirts of the woods, Jérôme Jaegle’s restaurant is a true celebration of nature—the clear guiding principle behind a cuisine inspired by the garden, the forest, the river, and the meadow. Trained under the greatest chefs (Têtedoie, Schillinger, and Nasti), the chef sought out the heights only to find himself at eye level with the flowers, humbly kneeling beside his permaculture gardens. The chef’s entire cuisine revolves around this love of authenticity—sometimes a bit too intense but always sincere: a potato and wood sorrel mousse, a starter served like a salad with trumpet zucchini, shiso and oregano leaves, and an onion vinaigrette aged in Gewürztraminer; followed by aged pike with sun-dried tomatoes, geranium oil, tomato water, and savory. The wild boar is the highlight of the meal, featuring a beautifully aged cut, lovage, eggplant, and gravy—with superb depth and texture. We finish with an elegant tartlet with quetsches, mirabelles, and rosemary sabayon. The wine cellar is very well-stocked (Weinbach, Mélanie Pfister, Domaine Binner, Marcel Deiss, Domaine Pattes Loup, Château Rayas, Julien Pilon, Domaine Giachino…).
