Long-time friends Quentin Hubert and Enguerrand Lecocq have combined their complementary skills to create ADMA - a French Mediterranean-inspired restaurant located a stone's throw from the Château de Fontainebleau. A former financial director, Enguerrand Lecocq oversees management and development, while Quentin Hubert, from a brasserie background, heads up operations. Both have also trained in the kitchen to ensure their versatility. ADMA's cuisine evolves with the seasons, with four menu changes a year. At the opening, Flore Mace was the restaurant's head chef, and now assists the establishment as a consultant chef. Specialties include panisses, vitello tonnato and chocolate mousse with roasted hazelnut chips, the house's regressive pleasure. ADMA stands out for its fresh, entirely homemade cuisine, with daily deliveries of fresh produce. Reservations strongly recommended.
