Launched by three friends in 2024, l'Acuda has gained in structure with the arrival of Tristan Leydier, who also worked at La ruche in Saint-Péray. This neo-bistro on Place aux Huiles ticks all the boxes of the genre, with its brutalist, loft-style decor on two levels, troquet-style furniture for a popular spirit, and traditional cuisine that's been revisited. The recipes are right up to date: lacquered calf sweetbread, lemon confit and trout roe, octopus panko, parsnip mousseline, reduced bisque and lemon, stuffed quail, buttered spinach, pepper and vermouth sauce, brioche with pink pralines and eggnog. Over a hundred references in the cellar.
