Gault&Millau's review

14/20
Chef's Restaurant Don't you know Bozel? From this true Tarentaise village, you can see the lights of Courchevel flashing like a funfair on the horizon. But to keep these international resorts going, these villages are the perfect refuge for locals. This is where Peter Riedjik decided to dismantle his business... to open his own table. In a house on the main street, the decor is simple but does the job. In summer, the terrace, topped with a large garland, gives the place a "guinguette" feel. But of course, the chef's cuisine is the main attraction. Mismatched plates, but real concentrations of taste and bias. A tangy cream of white beans, tomatoes and pine nuts, an intensely fresh carpaccio of sea bass with condiments. The other dishes are in the same vein: olive and lemon lamb confit, or why not this beautiful Arctic char cooked on the skin. Our only regret is that the garnishes are extra. The desserts are gourmet: meringue, apricot and basil or a light mousse with melilot, red fruits and green juice. The wine list is only a year old, and yet it's full of marvels, with a selection of nuggets at all prices.
