Just outside Salon-de-Provence, the Abbey of Sainte-Croix is one of the most beautiful sites in the area, a 12th-century high-rise building offering one of the most beautiful terraces in Provence. Now converted into a 4* hotel, the abbey offers a timeless setting in the heart of a twenty-hectare park planted with trees. The Garrigae table completes the experience with a pleasant regional cuisine, with some of today's recipes: octopus tentacles in pickles, watercress salad, pomelos and vinaigrette, stuffed guinea fowl supreme, porcini mushrooms and chestnuts, shiitake cream with coffee, crispy polenta and roasted pear with maple syrup, a dessert of chocolate amarena, almond financier, chocolate mousse and tonka bean.
