The small house run by the former Palm Beach chef works well, with privacy and discretion. Away from the town center (a ten-minute walk), Simon Andrews continues to demonstrate his attachment to Corsica and its terroir, with a focus on seasonal produce, always with a clean, precise taste as much as simplicity and finesse: on stuffed zucchini, grilled octopus, locally caught fish, lamb or Iberian pluma, at very reasonable prices. Good cellar of Corsican wines, smiling and professional welcome.
