Chef's Restaurant Between the Gare de Lyon and the Bassin de l'Arsenal, Antonio Torres's Frégate is a serious and well-mannered expression of the marine table. A bourgeois atmosphere, a timeless interior, waxed floor tiles, varnished wooden coffers and leather seats, all set the chic, hushed tone of the house where business meals are usually held. The chef delivers a conscientious plate of well-executed recipes, including crab salad, strips of squid en persillade, salmon gravelax, haddock poached in beurre blanc, sea bass fillet with chorizo or turbot fillet with razor clams. Menu €38.
