Chef Jean-Marc Notelet, who graced Caïus in the 17ᵉ arrondissement for many long and delicious years, is back in business in a bistro of great age. A lick of red paint on the facade later, a few touch-ups inside and À L'Improviste is back for another go. It's already such a success that you can't just turn up... unannounced. Reservations are highly recommended to enjoy the pâtés, terrines and marbrés that Jean-Marc Notelet often prepares after service, when the last customers have sailed away. Everything here exudes seasonal, bistro-style cooking, perfectly supported by a wait staff delighted to present the chef's creations on the daily slate. Fresh, well-prepared, reassuring and comforting, with just the right amount of technique to impress, this is the place to be. A cheerful team and a smiling chef. The wine list features such nuggets as "Jour de Soif" from Domaine du Bel Air in Burgueil or pinot gris "Roche Calcaire" from Domaine Zind-Humbrecht in Alsace.
