The Oktobre revolution took place a few seasons ago for Martin Maumet, at the helm of the establishment he took over after working for a long time with William Ledeuil in the days of the KGB. The menu is a little more French, bourgeois modernized, with very good products and an obvious mastery of combinations: trout from the Pyrenees asparagus puntarelle turnip shellfish butter and buckwheat, Auvergne pork cheek squash gnocchi and button mushrooms miso onion condiment, pear confit in walnut wine and cocoa, vanilla ice cream diplomate hazelnut praline and coffee. The lunch menu is very attractive, while the sequence, taken from the menu, costs €65 for five courses, and €83 for six courses in the evening.
