Chef's Restaurant Here's a chef who dares to step out of the Basque repertoire to offer a personal cuisine, asserting his personality while preserving the spirit of his terroir and roots. In this bright, warm setting with its large fireplace and elegant tables, the team, along with owner Charles Olascuaga, is firmly committed to a creative path: cream of parsnip, parsnip glacé, celery-apple virgin playing on textures and harmonious flavors, near-perfect veal, masterfully cooked, mousseline of leafy carrots and orange veal jus, apple mille-feuille a little in the background.
