Remarkable Restaurant It might seem a little dated, in search of an exoticism now popularized and well known to a clientele that travels the world from table to table without leaving Paris. But William Ledeuil's cuisine is something else. Technical and fusional, it's always on the lookout for new flavors and distinguished broths, with a wide range of aromas: ginger, turmeric, yuzu kosho, wasabi, red kosho, sea herbs and more... In this urban-style space, with its designer armchairs, a young, cosmopolitan team (from Burma, Korea, Thailand, Indonesia and France) is hard at work. The 7-course menu at €125 is business class between France and Asia. You'll be carried away by sea bream, tarama, ginger and caviar; gourmet ravioli of chard, morel mushrooms, Asian mushrooms and wild garlic pesto; lobster on a Thai broth and coral condiment; pearly pollack, cuttlefish tagliatelle, red yuzu-kosho jus and bouillabaisse, with an explosive mouth-feel; and then an accomplished, gourmet dish, lagrimas of Iberian pork, stewed feet and ears in tempura. We finish strong with three desserts: white chocolate-wasabi-strawberry ice cream, followed by dark chocolate sorbet, miso-sesame caramel, whisky gelatin and a final touch of meringue-rhubarb, agastache ice cream. A fine culinary voyage accompanied by a wine list ideal for dishes from elsewhere, commented on live by the chef himself. William Ledeuil greets each table with courtesy and kindness.
