Chef's Restaurant Opening in November 2023, this cosy little house in the center of Megève houses two restaurants in one: "Vous" and the Japanese-style "Anato". "Vous" is a logical sequel to "Nous", where chef Julien Gatillon takes over the dining room to offer the whole table a custom-made menu. Here, on the first floor, his former second-in-command Jean Pastre is at the helm, assisted by Paul-Arnaud Martin. The tandem works face-to-face with you, as all guests are seated at the counter (maximum 14 people), facing the kitchen, and watch the plates being built up as they go along. This orchestration lends extra flavor to dishes like Arctic char, watercress and caviar, or veal fillet, celery, horseradish and lovage. The noble products are cooked to perfection, and the accompaniments are not just a mere presence, but a thoughtful enhancement to the balance of the dish. A wine list of 150 fine bottles is on offer, and access to the 350 "Nous" vintages is available in advance. Service is precise and efficient.
