At the foot of the Montagne Noire, Anne and Thomas Cabrol welcome fourteen guests around a counter three evenings a week, for an oeno-gastronomic promise kept to the end. Thomas orchestrates a unique twelve-course menu based on local produce and terroir, with remarkably precise single-product dishes featuring fennel and celery, before truffles and Lautrec garlic enter the scene, the latter tasted with crisp white asparagus used as a mouillette. The trout confit, served tempered and meltingly soft with douglas fir, remains the highlight of the evening, closely followed by Mont Royal pigeon with flambadou, which intensely prolongs the taste of the poultry. Anne, for her part, holds her ground with equal conviction, drawing from her cellar of a thousand references for glass pairings that are an event in themselves.
