Chef's Restaurant La plus belle maison de Mont-de-Marsan was an opportunity for Philippe Lagraula to return to the heart of the Landes region, where his passion began. Having previously worked in Dax and Bordeaux, Lagraula now finds himself in a truly exceptional setting, in a large Belle Époque house that is as much a 4* hotel as a museum. Amidst the collections and architectural rarities, the chef pursues an equal spirit of art and technique, demonstrating a commendable rigor. The €85 menu summons up the terroir with great elegance: scallops, carioca and yellow pepper, Geloux trout, blood orange and hierba luisa, black pig with yellow chanterelles and beet, pineapple coconut and hazelnuts. Well-stocked cellar.
