Gault&Millau's review 2025

A new name for the Verte Vallée restaurant, but the team around chef Thony Billon is still going strong. A contemporary, almost futuristic decor is the prelude to a highly personalized and comfortable tasting experience: half-cooked tuna loin in beef stock with mandarin and pomelo jelly, lean pork with chestnut and truffle oil coulis, pike quenelle with parsley, tuberous chervil and cured ham, pigeon from Jaeger, roasted supremes with beet confit in a pistachio and truffle jus declination... Interesting desserts, regional wine cellar.
