Remarkable Restaurant Loïc Villemin's ethical and locavore approach is highly commendable, and has been instrumental in bringing him success and toques. However, over the past few seasons, there has been something of a glass ceiling preventing him from progressing in his approach, perhaps due to excessive caution - an apparent contradiction for such a creative chef - or a reluctance to "send out the watts", which is by no means a fault. In this zen and relaxing setting, on the doorstep of a golf course and surrounded by greenery, the techniques used to sublimate simple products such as tomato, catfish (tempura), pointed cabbage with beurre blanc sauce, kale, zucchini or duck (with roasted fennel), and once again, we applauded these skilful montages, these variations in textures and flavours. The chef passionately follows the seasonality of his produce, some of which comes from his own kitchen garden, and the extensive wine list, with two fine books, one for reds, the other for whites, offers a vast panorama at attractive prices. A fine menu at €120, faultless service, neither too present nor too stuffy, but very attentive, with the chef himself happily joining in to accompany this beautiful moment.
