Prestige Restaurant Loïc Villemin, who trained with the likes of Arnaud Lallement and Laurent Peugeot, and is a fervent admirer of the cuisine of Michel Bras (who until a few years ago ran a restaurant in... Toya, Japan), has set himself apart from his masters to write his own story and define the guidelines of his cuisine. A fervent adept of fermentations, garums and whey (to the point of using it instead of water in his excellent homemade natural sourdough bread), this discreet young chef is first and foremost a hard worker who, despite the recruitment difficulties in this isolated Lorraine region, strives on each plate to multiply the preparations and accompaniments. If we prefer the more pared-down, straightforward dishes (such as the beautiful Breton lobster simply barbecued, with a lightly spiced fig condiment, fig leaf oil, lobster bisque and garum and whey, or the magnificent, perfectly-cooked pigeon fillets), we can't help but bow down before this flurry of ideas and constant concern to introduce customers to a naturalist cuisine featuring regional produce and vegetables grown on the chef's farm. A superb dining room, both contemporary and bright, with panoramic views over the golf course, a complete cellar (including a fine collection of champagnes), and excellent desserts.
