The recognizable red façade is a beacon for many regulars, who swear by the gastronomy that Thomas Ponson has so skilfully tamed for almost a quarter of a century. And the ideas continue to flow, the combinations advantageous, the plates composed with care and talent, in a €53 menu skilfully elaborated, leaving the choice and whetting the appetite: duck effiloché, onion chutney potato espuma, red mullet plancha carrot orange espuma chorizo, cabbage stuffed with red partridge foie gras bouillon corsé, immortelle ice chartreuse yellow citrus. You can also follow the suggestions of the moment, and the advice of perfectly trained service staff. A vast, classic cellar giving pride of place to the region.
