Remarkable Restaurant From the ultra-contemporary covered patio, the cloudless sky could just as easily be that of Arcachon as that of Thailand. Chef Thierry Renou has a love of both countries, traveling back and forth each year to find inspiration and bring to life a bridge between cultures, as convincingly accurate and masterful as ever. While admiring the central palm tree, customers can enjoy a travel experience, balanced between land and sea, with Olivier Laban's oysters refreshed in a pomelo and timut nage, aloe vera sorbet, pig's trotter cromesquisite and kalamansi mousseline, blue lobster and stuffed zucchini flower, bouillon zesté à la main de bouddha, glace ricotta et fleur de sel, an elegant maigre du bassin, tourteau au saté, champignons bruns et salicornes, bouillon tom kha kaï, a pigeon from Mios, sablé noisette and foie gras panna cotta, fig and parsnip mousseline with walnuts, a very French finale with a Grand Marnier soufflé. For special occasions, the seven-course menu costs €140.
