Chef's Restaurant A superb piece of machinery, designed with all the talent of the Pourcel-Château trio on the outskirts of the city. And while we may be less enthralled than at first by the technical prowess of the varied spaces for equally varied cuisines, from tapas to cocktail spirit, Languedoc gastronomy or modern brasserie, we salute the energy and motivation of the teams to please so many people at the same time. A moment that takes you out of the daily grind thanks to communicative enthusiasm: we appreciate the homemade gnocchi with truffles, candied pumpkin, vegetable chips, roasted turbot fillet, small squid stuffed with eggplant caviar, before the vanilla millefeuille, fresh raspberries, mint ice cream. Extensive cellar coverage of the Languedoc vineyards.
