Chef Takao Takano's simple approach to cooking is to respect local produce and take his time. Originally from Japan, Takano's dishes are both highly technical and incredibly legible. An appetizer of bleak from the Saône river on a gourmet chawanmushi announces the chef's high standards, followed by a multi-cooked tuna accompanied by a vegetable garden of multiple tastes and textures. The perfect Lake Geneva féra is served with a barely bitter vermouth sauce. The subtle two-course squab reveals spices that are both light and long on the palate. The seasonal dessert: white peach from the Drôme, hibiscus and wild blueberries, bathed in a lavender infusion, was just as readable as the rest of the meal. In short, a chef's cuisine, with no false notes, but no great surprises either, in an experience where a little extra soul and warmth would no doubt be welcome. Imposing wine list with a focus on local products and neighboring regions, good lunch menu at €80.
