Remarkable Restaurant It's a Japanese huis-clos where everything seems to be done to take you away from Paris and bring you closer to Tokyo. Under the artificial light of a luminous ceiling, a small space separated from the world, where opaque windows reinforce the impression of floating outside time. The experience is most focused on the play in progress, a ceremonial art led by chef Isao Horai, unrolling an exemplary omakase menu. At the center of this marble counter, where no more than eight guests can sit, the sushi master performs almost everything live, and makes it as easy to see as it is to taste, a meticulous and elegant gesture, forming piece by piece the elements of each plate. One of the signature starters, tofu and toasted sesame, is followed by a trilogy of brill, Breton lobster and Japanese salad, featuring fried, raw and marinated dishes, then seabass sashimi and miso-marinated fatty tuna, before the remarkable sequence of sushi dishes (seabass, eel, mackerel, yellowtail and red tuna). The menu concludes with two fine desserts: rice ice cream with grated summer truffle, and hot soufflé with matcha sauce. Impeccable welcome and service. Formulas from €90 to €320.
