Chef's Restaurant The job of investigator sometimes demands a little self-sacrifice, with these growing constraints. After exchanging our shoes for slippers, we go into one of the two vaulted rooms, a little gymnastics to get seated and we're seated in front of our table. The staff inform us that the menu is "surprise" (what a surprise!), with a little guessing game (did we really come for this?). First, smoked mackerel shares the plate with tomatoes (dried, powdered and roasted), cherry and a silky sauce. Then the chef's signature dish, foie gras is smoked with sakura wood, accompanied by a crispy palet of three rices and black truffle espuma, we continue with slices of kohlrabi and a piece of charcoal-baked sea bream, verjuice sauce followed by cochon de Bigorre, kohlrabi and roasted spring onion. A pre-dessert of strawberry, cheesekake-yuzu cream before glazed rice. Efficient service, staff know the dishes by heart so they can play. A wide choice of wines from all regions, although the bill and time spent (2h30 for the 8 sequences) may seem less fun.
