Gourmet Restaurant The restaurant is discreet, tucked away in a small street away from the city center, but that hasn't stopped it from quickly attracting customers, as evidenced by the crowds that day. The small table (two rooms for around twenty diners) exudes an atmosphere of complicity, a closeness that almost gives the impression of knowing one's neighbors, gathered in a contemporary yet classic décor of parquet flooring, cyan paint and green plants, with bare wooden tables. Master of ceremonies is chef Maxime Le Gallo, who trained at Manoir du Lys (14.5/20) in Bagnoles-de-l'Orne, and who took over the place this year, following in the footsteps of predecessors Élodie and Mathieu Évrard, while adding his own personal touch. The chef has placed his principle directly in the name, inviting diners to discover a culinary version of "less is more", where detail is found in trompe-l'œil simplicity, bringing genuine technique behind seemingly bare plates. The compositions testify to a wealth of experience and a promising debut. We salute the fine work on white tuna, with its beet vinaigrette and rhubarb and beet tartar, the precision of the seasonings and cooking (although we could have done with a more substantial accompaniment), or the beautiful strawberry and thyme dessert, all in declension, as pleasing in substance as in form. In the evening, we switch to the tasting format, with a slash menu of three to five courses, from €39 to €59. Professional service.
