The years go by, the prestige remains, and this high-end Chinese cuisine shows no signs of decline, serving the hotel’s numerous guests at every meal. Tony Xu has been at the helm for two years, with undeniable expertise that reassures the chefs: Lo Hei with yellowtail and Kristal caviar, gluten-free lobster ha kao, crispy sea bass with sweet-and-sour sauce, and, of course, Peking-style roast duck—a dish that’s now quite unique in Paris. The best option is the six-course lunch menu for €88.
