Chef's Restaurant We love these classic houses that, like beacons in the night, always point the right way. The hotel-restaurant, with its pretty parquet-floored rooms and human-scale dining room, is indeed a safe stopover, where residents and locals meet every year with renewed confidence. Chef Vincent Coiquaud offers gourmet Charentais cuisine, with local produce, slightly bourgeois recipes, exacting execution and sincere pleasure, such as a soft-boiled egg in breadcrumbs in a new take on the œuf meurette, with lardons and mushrooms, a successful land-sea match on guinea fowl stuffed with langoustines, American sauce and spaghetti, a gourmet New York roll filled with 70% chocolate ganache and cocoa nibs. A relevant cellar with a good representation of Saintonge.
