Remarkable Restaurant While the jungle-like decor is far from rustic, the restaurant's style is best understood on the plate. When the "Instant nature" menu is unveiled, it's clear just how much Maxime Laurenson knows and masters the best produce from the hills and the Rhône and Loire valleys. His cuisine is raw, peasant and generous, and above all, he has the soul of an innkeeper... where every guest feels welcomed and treated as a guest. Offered at €115, this is an interesting first step. After a first tableau based on catfish, the chef cleverly moves on to frogs, crayfish and pike-perch. Back to the farm with duck and artichoke olives, served with a silky antesite sauce. We love the aromatic complexity, with its licorice and acidity. Desserts are light and airy. Marshmallow mingles with preserved lemon and fromage blanc sorbet, while meadowsweet finds a summery touch with blueberries, almonds and fermented milk. The wine list offers a range of wines from the Savoie, Jura and Beaujolais regions. With the complicity of his wife, Hélène, Maxime's urban Rustique is getting ever closer to its identity.
