Chef's Restaurant Vincent Croizard never varies, and we're grateful for that. This gives visitors the assurance that the two toques don't come out of nowhere, and that all they have to do is ring the doorbell of this private home, just off the beaten track but not far from the Maison Carrée, for the spool to churn and the adventure of flavors to begin. The beautiful four-course menu at €70 offers many pleasures in this warm, intimate setting: research, work around the plate, right down to the dressings and the choice of peppers and spices, for beautiful sensations on the palate: perfect free-range egg veiled with truffles, root brunoise and Jerusalem artichoke purée, eggnog broth with allspice and long red pepper, roasted sea bass with wind powder and fennel seeds, jus emulsified with sliced butter, rack of free-range pork in paupiette, roast jus with truffles and Karimunda black pepper, pan-fried chard with kawa spices. A pretty and inventive saffron dessert, well-supervised service by the chef's wife, Gisèle, and a well-defined and assertive wine selection, with a wide-open view of the Occitan vineyards.
