Chef's Restaurant Giovanni Passerini can definitely be classed as a purveyor of taste, so much so is he at the heart of the transmission of knowledge and cultures, knowing how to bring people together while giving them the necessary distinction. The chef loves France as much as he loves Italy, combining his memories of Rome with the wonders of his homeland, knowing just as well how to work with duck from Challans and turbot from Brittany, as he does to recall the uniqueness and strength of tripe à la romaine. An ambassador for Italian cuisine, never confined by labels, the chef blazes his trail with sense and technique, introducing us to sweetbreads with Vesuvius tomato, lobster mayonnaise, coriander and fresh almonds, and superb pappardelle with ossobuco ragout, girolles, saffron, lemon and rosemary, linguine with clams, green peppers and cernier grouper marinated in herbs and lemon, duck from Challans, yuzu kosho, eggplant, buckwheat, arrowroot and black garlic jus, lemon and elderberry cake, mascarpone, rhubarb, strawberry sorbet and arlette. Beautiful cellar.
