Remarkable Restaurant Le Bourget du Lac's environment lends itself admirably to gastronomy. The Marin family made no mistake, setting up shop facing the lake back in the 60s. It's now the 3ᵉ generation with Valentin and Charlotte who welcome you. The panorama is superb and the restaurant's classic great room envelops guests in comfort. Terroir and seasonality are the chef's watchwords, with local produce highlighted by vivid visuals and delicate preparations, blending rusticity and finesse, in the image of pig's trotter accompanying itself with the green and fragrant tarragon. The appetizers shine with flavor and elegance: escargot sorrel tartlet or oregano puff pastry for eggplant caviar. Tomatoes are at the service of a cameo of yellows and reds with "bonbon de tomate complice au sureau". Aesthetics serve taste, with creamy goat's cheese in the middle of the plate, tomato sorbet, basil and the acidity of elderberry. The pigeon is served filleted with the leg and giblets. The accompaniment is a blend of beet and red fruit, with the sweet, salty and tartness of red fruit. The wine list offers a fine assortment of local wines, and the service is pleasant but a little slow, and would benefit from a little less pomp and circumstance.
