Théoule is sort of the very end of the line once you leave Cannes and the Croisette, just before the stretch of red cliffs leading to Saint-Raphaël. It’s still the French Riviera, with a wild side that’s hard to pin down at first glance. That’s the feeling you get in this very chic restaurant overlooking the Mediterranean—and it’s a sensation that lingers on your plate, in a meal brimming with the essence of the waves, mood, and character. Alain Montigny, like a skilled captain, guides the journey with his deep knowledge of the local environment: local fishing, seasonal produce, and the finest farms in the hinterland, all woven together to create a well-structured, appetizing, and ever-evolving menu. The menus are kept secret and set in advance, but the “first-floor” menu, at €165 for six courses, is an excellent option for discovering the restaurant.
