Decorated like a modernized period salon, the room is the first contact with the sophisticated world of Julien Binz, where the pleasure of the senses is paramount. The Fragonard fresco on the wall immediately indicates the precious, sensual spirit of the house, with its Napoleon III mirror and magnificent sconces, the nobility of the textiles and the tasteful soft lighting. Everything is soft and charming, putting you in the right frame of mind to discover the chef's cuisine, inspired as much by his experiences at the Armes de France and the Auberge de l'Ill, as by his own taste for travel. And while it's true that we're in Alsace, the dishes sometimes draw their inspiration from far-off places, working with spices and cooking techniques to offer a new perspective on the region. There's an elegant cylinder of valley trout tartare with horseradish cream, beet and radish pickles like flower petals, then a rather exotic two-course langoustine in a lemongrass broth and crispy potato, peas and orange-tandoori langoustine sauce. There's also an astonishing sea bass with puffed scales and a lemon-ginger condiment, a crisp, well-confited carrot, then a roasted Alsatian squab and crispy leg, a remarkable variation on artichoke and pigeon juice spiced up with sweet spices, with admirable balance. The chocolate-peanut finger concludes the experience on a regressive note. Newly recruited Cindy Schirr brings the right height and advice to the cellar, bringing with her twenty years of experience, most recently with Olivier Nasti's Chambard. The selection is exceptional, with wines from all over Alsace and France, for both special occasions and special occasions.
