Chef's Restaurant Other restaurants have come and gone, but Valrugues remains a benchmark appreciated by a loyal clientele. Away from the hustle and bustle of the city, this estate in the surrounding woods still looks good, with a large, young, well-trained and attentive staff. In the large, comfortable dining room with its hotel-like atmosphere, the brigade is also hard at work. The semi-cooked duck foie gras is technically well done, but lacks texture, with pear chutney with Sarawak pepper and Ardèche chestnuts, vanilla and toasted bread, the meat is preferred to the fish, and the chocolate dessert is valiant, chocolate, cocoa nib chrysalis, creamy Tulakalum, while multiplying the ancillary flavors (Buddha's hand, macadamia, tarragon, lemon...). An interesting and ever-expanding cellar, with a good sommelier team.
