Chef's Restaurant Increasingly chic, this hotel in a class of its own, on the heights of the village, plays up its exclusivity by rolling out the black carpet on the marble access staircase. Chef Jérôme Yahia knows the region well, having worked alongside Edouard Loubet not in the Alpilles, but in the Luberon. The terroirs are close enough that the Provençal scents of thyme, savory, rosemary and rarer herbs can be found in this close-to-home cuisine, even if the fine clientele also demands its share of prestige, with foie gras, scallops and venison. The first menu, at €90, includes Ardèche trout with vanilla celery, mango and dill, and jus corsé, or saddle of lamb roasted with thyme, prunes, pak choï and crispy shoulder. Extensive wine cellar covering the surrounding vineyards, the valley and the whole of Provence, with grands crus from all over. Well-crafted desserts by pastry chef Christophe Legrouyer.
