This marvellous establishment, housed in a nine-century-old Cistercian abbey, offers a freshness and naturalness that is almost exotic to the eye, nose and taste, defending in each of its dishes the simplicity of a product taken from the earth at hand. The plates do the work, the method deploys it in pleasure, a homemade pig terrine, veal escalope and thyme jelly, beef and onion confit, roasted apricot and lemon mousse. Local winery and biodynamics.
