In the kitchen, Jean-Philippe Hellman and his son Pierre present a plate of very high quality, with home-made goose foie gras, port jelly, seasonal confit and toast, consommé with beef marrow quenelles, frog mousseline, spinach and beurre blanc sauce, veal medallion, röstis, seasonal vegetables and ivory sauce, iced nougat and seasonal fruit.
