Gourmet Restaurant The majestic brasserie on Place Granvelle is an institution, marking Besançon with its timeless classicism, imbued with references to the history of the city and its illustrious men. For business meetings and social occasions, chef Matthieu Engel provides a classic score: green asparagus, lemon sabayon and bottarga, fario trout medallion with lovage pesto, sweet onion shells au gratin and ginger sauce, a declination of Sisteron lamb, oregano jus and spring garnish, strawberry and tarragon sweetness. Good service.
