Chef's Restaurant The house is renowned, the estate in its green setting away from the city has a certain charm, and the people of Saint-Sauveur don't miss a ceremony or a family dinner. The cuisine of the valiant chef Stéphane Gautier has every reason to be mentioned: it's well-made and constructed, lacking only a hair's breadth of commitment and identity to stand out from its status as a fine hotel: foie gras bergamot prune, line hake chou pointu ail des ours, sweetbreads beet crapaudine elderflower vinegar. The full-sequence menu-card at €50 is a highly recommendable affair, with service in keeping with the restaurant's claimed standing and a cellar full of fine labels.
