The third chef's hat acquired last year is anything but a coincidence. It's a path that Laurent Cherchi has built up over the eight years he's been here, grabbing half-points through sheer talent, hard work and energy. Today, he can enjoy it... and persevere. Admittedly, without a menu, it's a little easier to manage and control, but the work in the kitchen remains considerable and full of pleasant surprises in his menu proposals, such as Mediterranean shrimp, red squid from Grau du Roi with chilli and smoked eel, or poultry salsify, miso shiki from the Montagne Noire consommé latte, among the chef's latest creations. With prices ranging from €60 to €135 and eight proposals, you can adapt your budget to your pleasure of discovery. Extensive wine cellar in the region and beyond, with a focus on "living wines".
