On the Mériadeck side, Daniel Gallacher assures and reassures, bringing to each plate that grain of fantasy and identity that confides, against a solid traditional background. The space is sober, good for business and tranquility, and regulars and newcomers alike are at ease. And the two toques are doing well, on the impeccable €30 lunch menu (upgradeable to €40 with an extra dish), as well as the €44 evening menu with fermented buckwheat and dandelion asparagus, roast hake with morels and sherry butter, lamb shoulder with broccoli and anchovy jus, and rhubarb ginger and tagetes clafoutis for dessert. A connoisseur's cellar, with a good three-glass pairing formula for €30.
