Gourmet Restaurant First of all, you have to appreciate the play on words: phonetically, R.mana gives "hermana", "sister" in Spanish. Carmen and Juliette launched their restaurant together, which was formerly called La Table de Saint-Just, run by their parents. The two sisters decided to change the décor and the type of cuisine. Carmen has created a more convivial space with a sober, uncluttered style; Juliette, who was the pastry chef at the family inn, now offers successful bistronomic cuisine. The langoustine tails in tempura are perfectly cooked, but the parsnip velouté is a little bland. The sweetbread chips are well done, but deserve a more gourmet accompaniment. For dessert, the lemon, lemon yuzu mousse, lemon caviar confit, lemon cookie, ends the meal on a very neat and pleasant note. The brigade of waiters and waitresses moves from table to table with friendliness and dedication, although there's still room for improvement. The wine list is well-balanced and sufficient for the location.
