Chef's Restaurant Sometimes, all it takes is one sentence, one scallop, one clementine, to know that our guests have been to a good school. Estelle and Maxime Dourdin met at the George V, from which they drew a formative experience, a sense of welcome and discourse, a rigor in the chef's textures and colors, also reminiscent of his stints at Labbé and Savoy. This native of the Vendée region has returned to his homeland, which he showcases in meticulous compositions where land and coast alternate in harmonious contrasts: a fresh, airy scallop with a celeriac bavaroise and an unforgettable dill, lemon caviar and celery stick reduction; on the other hand, a powerful, dense, perfectly cooked venison back with a generous cannelloni of red cabbage and shredded venison, blackcurrant condiment and red wine mirror. The interlude and dessert ensure the final descent, in a very well-balanced menu: chestnut and candied pear tartlet, mascarpone cloud and chestnut custard, followed by candied clementine with Timut pepper, olive oil financier and lime chiboust cream, tuile dentelle and Suzette sauce. The cellar's selection of wines, past and present, in a wide price range: L'Orée du Sabia, Éric Sage, Henri Bourgeois, François Mikulski, Gramenon, Vincent Couche.
